Ingredients for 2 servings:
- 2 shank(s) of beef
- 1 large onion(s), diced
- 1 bunch soup vegetables, finely chopped
- 100 g porcini mushrooms
- 500 g mushrooms, brown
- 150 ml white wine
- 2 tsp vegetable broth, instant
- 200 ml jus (game jus)
- 50 g herbs (8 herbs), frozen
- 2 tbsp clarified butter
- n. B. Flour
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours 10 minutes
Coat the leg pieces in flour and brown in a pan with clarified butter. Then remove. Preheat the oven to 180 degrees Celsius. Roughly chop the onions and mushrooms. Finely chop the soup vegetables. Sauté the onions first in a pan, then the soup vegetables, and deglaze with wine. Add the mushrooms, the jus, the vegetable stock, and the eight herbs. Add the leg pieces and cook in the oven for about 1.5 hours.
