Ingredients for 4 servings:
- 8 peaches, unpeeled, halved and pitted
- 120 ml Amaretto
- 3 drops of vanilla essence
- 4 tbsp sugar

Working time approx. 10 minutes; Total time approx. 10 minutes
Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit). Place the peaches cut-side up in a shallow, ovenproof dish. Mix the Amaretto with the vanilla essence and 2 tablespoons of sugar and pour over the peaches, allowing some of the liquid to collect in the pits. Bake in the oven for 10-20 minutes until softened – depending on the size and ripeness of the fruit. Sprinkle the cut surfaces with the remaining sugar and place under the grill to caramelize. TIP: You can cook the peaches the day before, but caramelize them just before serving.
