Ingredients for 4 servings:
- 4 small turkey schnitzels (150 g each)
- salt and pepper
- 6 tbsp olive oil
- 4 tsp pesto
- 2 tbsp pine nuts
- 2 beefsteak tomatoes
- 150g mozzarella
- 2 tbsp basil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Halve the turkey cutlets, rub them with pepper, and place them on a baking sheet greased with about 3 tablespoons of olive oil. Brush the meat with pesto and sprinkle with pine nuts. Wash the tomatoes, slice them, and remove the stems. Slice the mozzarella. Place a slice of tomato and a slice of mozzarella on each cutlet, season with salt and pepper, and drizzle with the remaining olive oil. Bake in a preheated oven at 180°C for about 15-20 minutes. Sprinkle with basil to serve. This dish is easy to prepare and is therefore ideal for entertaining guests.
