Ingredients

For the ham meat rolls:

  • 800 g Mixed minced meat
  • 3 Shallots
  • 1 small Clove of garlic
  • 2 Vine tomatoes
  • 6 Sun-Dried tomatoes in oil, drained
  • 70 g Tomato paste
  • 2 tbsp Frozen basil
  • 1 Egg
  • 1 tsp Salt
  • 0,5 tsp Ground pepper white
  • 2 tsp Italian spice mix
  • 1 tsp Sweet paprika
  • 125 g Boiled ham, thinly sliced

For the tomato sauce:

  • 1 size Onion
  • 2 Discs Breakfast bacon
  • 1 tbsp Vegetable oil with lemon
  • 1 tbsp Tomato paste
  • 1 big can Peeled tomatoes, roughly chopped
  • 500 ml Vegetable broth hot
  • 1 shot White balsamic vinegar
  • 0,5 tsp Sugar
  • Salt, colored pepper from the mill
  • 1 pinch Cayenne pepper
  • 1 pinch Espelette pepper
  • 100 g Creme fraiche Cheese
  • 1 tsp Dried oregano
  • 1 tsp Dried marjoram
  • 0,5 tsp Honey liquid
  • 2 tbsp Frozen basil

For gratinating:

  • 200 g Mixed cheese leftovers: Old Amsterdam, goat cheese, butter cheese

As a side dish:

  • 500 g Farfalle or other pasta

Instructions

  • Put the minced meat in a bowl. Peel the shallots and garlic. Wash the tomatoes, cut out the stem and seeds. Dice the dried tomatoes, fresh tomatoes, shallots and garlic. Add to the minced meat together with the tomato paste, basil, egg and spices. Knead everything until smooth and form small rolls out of it.
  • Preheat the oven to 180 degrees. Wrap the rolls with the ham slices and place them side by side in a large baking dish.
  • For the sauce, peel the onion and cut it into cubes just like the breakfast bacon. Heat the lemon oil in a saucepan and fry both in it until the onion is translucent. Stir in tomato paste and roast. Deglaze with the peeled tomatoes and vegetable stock and bring to the boil.
  • Add balsamic vinegar and sugar. Add salt, pepper and the other spices. Let it simmer for about 10 minutes over a medium heat. After 5 minutes, add the crème fraîche. At the end of the cooking time, add the dried herbs and honey to the saucepan and puree the sauce.
  • Mix in the basil and distribute the sauce evenly over the ham rolls. Sprinkle with the grated cheese (I bought the cheese cheaply as end pieces in the supermarket). Bake in the middle of the oven for about 40 minutes until the crust is golden brown.
  • In the meantime, cook the pasta until al dente and drain. Arrange the baked ham rolls with the sauce in portions on the pasta and serve.
  • We also had a mixed salad with a garlic yogurt dressing. As an alternative to pasta, rice also tastes very good with this meal. I wish you a good appetite and have fun cooking :-)!
