Ingredients for 4 servings:

  • 1 kg potato(s) grated
  • 2 eggs
  • 1 pinch of salt
  • Flour or rolls

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Hessian potato pancakes

Grate the potatoes and drain some of the resulting broth. Add a little flour or 1-2 soaked bread rolls to thicken them. Mix in the two eggs and the salt. Bake on both sides on a hot oven or stovetop like a small flatbread. Serve with butter, applesauce, or rendered bacon fat. The original Oweplätz is cooked on a hot plate of a wood-fired stove. The taste is simply unbeatable! My father used to bake them on a regular stovetop as a last resort. But I think a pan will do just fine.
