Ingredients for 3 servings:
- 500 g sweet potatoes
- 3 eggs
- salt and pepper
- Cayenne pepper
- Garlic
- n. B. spring onion(s)
- 1 tbsp coconut oil
- 2 tbsp coconut oil for the waffle iron

Peel the sweet potatoes, whether purple or orange—both taste good. Peel them and either finely grate them on a grater or grate them very finely in a food processor, but do not make a puree. Mix the grated sweet potatoes with the eggs; it should not be a thin batter, but more of a firm mass. Season the mixture to taste with salt and pepper, and if you like, a little more spicy with cayenne pepper or garlic. Spring onions also go very well with the batter. Stir in 1 tablespoon of coconut oil. Preheat the waffle iron thoroughly, brush with coconut oil, and bake the waffles one at a time. With raw sweet potatoes, this takes about 6-8 minutes, depending on the desired crispiness. These waffles are ideal for a Paleo diet and can be modified. We like to eat them with avocado and a poached egg on top.
