Pan-fried Dishes: Mediterranean Mushroom Tomato Rice Pan

The perfect pan-fried dishes: mediterranean mushroom tomato rice pan recipe with a picture and simple step-by-step instructions.

Vegetables:

  • 600 g Mushrooms brown
  • 1 pole Leek
  • 1 Red peppers
  • 1 Onion
  • 2 tbsp Vegetable oil
  • 2 tsp Paprika pulp
  • 250 ml Vegetable broth hot
  • 50 ml Cremefine for cooking
  • Juice of 1/2 lemon

Spices:

  • 1 tsp Sea-Salt
  • 0,5 tsp Black pepper
  • 1 pinch Chili powder
  • 1 tsp heaped Sweet paprika powder
  • 1 pinch Sugar

For the rice:

  • 125 g Rice
  • 1 Onion
  • 1 Clove of garlic
  • 2 tsp Butter
  • 2 tbsp Tomato paste

Spices:

  • Salt, colored pepper from the mill
  • 2,5 tsp Gyros seasoning
  • 1 pinch Sugar

Aside from that:

  • 2 Tomatoes
  • 4 Branches Lemon thyme
  • 2 Branches Sage
  1. Brush, clean and slice the mushrooms. Clean and wash the leeks and peppers. Leek in rings, dice the peppers. Peel and finely dice the onions and garlic.
  2. Bring the salted water for the rice to the boil and cook the rice in it until al dente. Heat the oil in a pan and fry the mushrooms in it in portions, season with sea salt and black pepper.
  3. When all of the mushrooms are well seared, return all of the mushrooms to the pan. Then add the leek, paprika and a diced onion. Continue to fry everything, stirring, until the leeks start to soften. Stir in paprika pulp and roast for 2-3 minutes.
  4. Deglaze with the hot vegetable stock, cremefine and lemon juice, then add the chili powder, paprika powder and sugar. Bring to the boil once, then reduce over low heat until the rice is ready.
  5. Wash the tomatoes, cut out the stem and dice the pulp. Sort the herbs, wash them and finely chop the leaves.
  6. Drain the cooked rice and let it drain well. Heat the butter in a saucepan, sweat the onion and garlic in it until translucent. Then stir in the tomato paste and roast for 1-2 minutes. Take the saucepan off the heat and add the rice, stir everything well, season with salt, pepper, gyros spice and sugar.
  7. Add the rice to the vegetable pan and stir in. Season again to taste. Finally fold in the diced tomatoes and chopped herbs. Arrange and serve the rice pan immediately. Tastes very good as a main course with flatbread, tzaziki and a fresh salad of your choice. So we ate the mushroom pan, with cucumber salad. Have fun cooking :-).
