Pancakes 'Bolognese'

Ingredients for 4 servings:

  • 100 g flour
  • ½ tsp baking powder
  • 2 eggs
  • 125 ml milk
  • salt and pepper
  • 1 carrot(s)
  • 1 onion(s)
  • 1 tbsp oil
  • 300 g minced meat, mixed
  • 1 can of tomatoes (425 ml)
  • 2 tbsp tomato ketchup
  • 4 tsp clarified butter

Stuffed pancakes

Using the whisk attachment of a hand mixer, mix the flour, baking powder, eggs, milk, and a pinch of salt until smooth and the batter forms a pancake batter. Let it rest for about 15 minutes. Peel and wash the carrots and finely dice them. Peel and finely dice the onion. Heat the oil in a pan and fry the minced meat until brown and crumbly, seasoning with salt and pepper. Add the onions and carrots and fry everything thoroughly. Pour in the tomatoes and their juices, then chop the tomatoes slightly. Stir in the ketchup and let the sauce simmer for about 5 minutes, then season to taste and keep warm. Heat the clarified butter in a pan and cook 4 pancakes one after the other. Fill the pancakes with the Bolognese sauce, place them on plates, and cut them in half diagonally. Serve with a mixed salad.
