Pancakes with asparagus

Ingredients for 4 servings:

  • 100 g flour
  • 1 pinch of baking powder
  • 1 pinch of salt
  • 125 ml milk
  • 125 ml water
  • 2 eggs
  • Fat for frying
  • 1 kg asparagus
  • pinch(s) of salt
  • 1 pinch(s) of sugar
  • 4 slices of raw ham
  • 1 egg(s)
  • 1 onion(s)
  • 1 bunch of chives
  • 3 tbsp balsamic vinegar, white
  • 5 tbsp oil
  • salt and pepper

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Combine the flour, salt, and baking powder. Stir in the liquid until smooth, then stir in the eggs. Heat the fat in a pan and cook 4 pancakes one after the other. Peel the asparagus and trim the bottom ends. Bring water with salt and sugar to a boil, add the asparagus, and cook for 10-15 minutes. Cook the egg. Peel the onion and wash the chives. Finely chop the onion, chives, and peeled egg. Mix with the remaining ingredients. Place a slice of ham on each pancake, spread 1/4 of the asparagus and the vinaigrette on top, fold over, and enjoy. 398 kcal per serving.
