Pancakes with black pudding

Ingredients for 4 servings:

  • 500 ml milk
  • 400 g wheat flour
  • 4 m.-sized eggs
  • 400 g black pudding, peeled and cut into 1 cm thick slices
  • 2 large onions, thinly sliced
  • some oil for frying
  • some salt
  • some pepper
  • 1 pinch of nutmeg, grated
  • Flour, for the sausage

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Rhenish specialty

Combine flour and milk, add eggs and nutmeg, and season with salt and pepper. Cover and let rest. Fry the onion slices in a little oil until browned, season with salt and pepper, and keep warm. Coat the black pudding slices in flour, then fry briefly on both sides. Add the pancake batter and fry over low heat until golden brown on both sides. Sprinkle with the roasted onions and serve.
