Pancakes with gyros cream sauce

Ingredients for 4 servings:

  • 500 ml milk
  • 250 g flour
  • 1 pinch of salt
  • 3 eggs
  • 500 g gyros meat
  • 1 tbsp tomato paste
  • 1 cup of cream
  • 150 ml water
  • 1 tsp meat broth
  • 1 tbsp flour
  • Oil for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Place all of the pancake ingredients in a bowl and mix with a hand mixer. Let the batter rest for 30 minutes. Fry the batter in a pan to make pancakes and keep warm in an oven preheated to 50°C. Meanwhile, fry the gyros in plenty of oil. Dust with 1 tablespoon of flour, fry briefly, then add the cream, water, tomato paste, and 1 teaspoon of stock. Simmer on low heat for 15 minutes, stirring frequently. Pour the sauce over the pancakes in portions and enjoy.
