Ingredients for 2 servings:
- 12 slices of bacon
- 1 tbsp sugar
- 100 g wheat flour type 405
- 100 g whole milk, 3.8% fat
- ½ tsp baking powder
- 1 pinch of salt
- 1 tbsp oil
- 2 tbsp maple syrup
- 1 egg(s)
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Fry the bacon, drain, and let cool. Meanwhile, mix the batter. To do this, separate the egg. Beat the egg whites until stiff, slowly adding the sugar, then set aside. Mix the egg yolks, salt, milk, flour, and baking powder into a batter, then fold in the stiff-beaten egg whites. Heat the oil in a non-stick pan. Dip the bacon into the pancake batter and fry over medium heat until golden brown. Serve with maple syrup. Great for breakfast, finger food, or an appetizer. Tastes good hot or cold. Tip: If you want to save time, you don’t have to separate the egg and beat the egg whites until stiff and then fold them in again later. It tastes just as good if you simply mix everything together. The texture will just be less airy.
