Ingredients
 

Panzanella

  • 1 Simit from the previous day / Turkish sesame ring
  • 200 g Date tomatoes, halved
  • 1 bunch Arugula
  • 3 Spring onions, cut into thin rings
  • 60 g Herbal olives, cut into rings
  • 200 g Sheep milk cheese
  • Butter
  • 30 g Raw cane sugar
  • Salt
  • Pepper

dressing

  • 1 Lime, zest and juice
  • 2 Garlic cloves, finely grated
  • 1 tsp Dijon mustard
  • 1 tbsp Honey
  • Olive oil
  • Salt
  • Pepper

Instructions
 

Panzanella

  • Cut the simit into slices and set aside. Sort out the rocket, remove the long stalks from the rocket. Wash the rocket, spin it and then cut or pluck it into bite-sized pieces and place in a large salad bowl.
  • Then add the spring onion rings and olive rings. Now cut the sheep's cheese into cubes and add it as well. Melt some butter in a pan and then add the Simit slices and turn them until they are crispy and golden brown, then degrease on a kitchen towel.
  • Now put the Simit slices in the salad bowl as well. Now let's continue with the dressing.

dressing

  • Put the lime zest, honey, mustard, grated garlic cloves and salt and pepper in a small bowl, add the lime juice and stir well, now slowly stir in the oil until it has a creamy consistency. Season again to taste. The dressing should be a bit too sour, the tomatoes add sweetness.

finish

  • Now pour the dressing over the salad and stir it once. Now immediately put the sugar in a pan, add the tomatoes and let them caramelize while turning, salt and pepper and pour over the salad immediately and stir well. Of course the tomatoes left juice and it is wanted that this comes with the salad.
