Salad dressing with papaya seeds

Using a fork or whisk, whisk together (olive) oil, vinegar (I recommend light wine vinegar), and salt to make a vinaigrette. Halve the papaya and scoop out the seeds with a spoon. Use only the seeds and add them to the vinaigrette. Stir once, and you’re done. Leaf salads go well with this, and any other salad toppings (spring onions, seeds, sprouts, etc.) are, of course, also possible. The papaya seeds can also enhance any other salad dressing. Papaya seeds taste like cress, only a bit spicier. This salad dressing always reminds me of my trip to Hawaii, where I enjoyed it every day.
