Papaya muesli

Ingredients for 2 servings:

  • 1 papaya
  • some lemon juice
  • 3 tbsp oat flakes, fine
  • 2 tbsp desiccated coconut
  • 3 tsp cinnamon sugar
  • 3 tbsp glucose
  • 4 tbsp milk, 3.5%
  • 150 g natural yogurt, 3.5%
  • 1 handful of blueberries for garnish

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

with coconut flakes

Peel the papaya, cut it in half and use a spoon to remove the seeds from the middle. Cut the papaya into small cubes and cut about 4 thin wedges from one half (for garnishing). Place the papaya cubes and wedges in a bowl, drizzle with lemon juice and set aside. In another bowl, put the oats, coconut flakes, cinnamon sugar and glucose and pour over about 4 tablespoons of milk (enough to just cover the flakes) and let it sit for at least 1/2 hour. Then stir the natural yogurt into the oat mixture and mix in the papaya cubes. Now you can taste and sweeten again if desired. Divide the papaya muesli between glasses or bowls and garnish with the papaya wedges and blueberries and serve chilled. Of course you can also use more blueberries (about 125g) and mix these into the muesli along with the papaya cubes. Both fruits harmonize beautifully with each other.
