Papaya salad

Ingredients for 4 servings:

  • 2 papayas
  • 1 lime(s), the juice
  • 1 orange(s), the juice
  • 1 tbsp oil
  • 1 tsp cane sugar
  • ½ tsp ginger, finely chopped
  • 1 chili pepper(s), finely chopped
  • 50 g cashew nuts, chopped
  • 4 leaves of lettuce, large leaves
  • 1 tbsp coriander or parsley, finely chopped
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

wonderfully fruity starter or side dish

Peel and deseed the papayas, and slice them into thin strips. Combine the lime and orange juice with the oil, sugar, ginger, and chili. Season the sauce with salt. Carefully mix the papaya and nuts with the sauce. Arrange the salad in portions on lettuce leaves and garnish with herbs. Delicious with fried shrimp!
