Ingredients for 1 servings:

  • 2 eggs
  • ½ bell pepper(s), red
  • 2 slices lean ham, e.g. turkey ham
  • some milk
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

quick, low-fat (evening) meal – looks appetizing

Cut the ham into small cubes and dice the washed red bell pepper. In a small, lightly greased non-stick pan, lightly fry the ham cubes, then add the bell pepper cubes and roast everything for a while. Meanwhile, crack the eggs (I use organic eggs), place them in a glass, add a little milk and salt to taste, and then pour them into the pan. Stir briefly and let them set slowly over low heat. If you like, add some freshly ground pepper. Then lift them out of the pan with a spatula and serve. Serve with a slice of dark bread or a whole-grain roll.
