Ingredients for 4 servings:
- 8 large potatoes, waxy
- 100 g butter
- 30 g olive oil
- 2 cloves garlic
- 1 sprig(s) rosemary
- 4 tbsp Parmesan, grated
- Salt
- Pepper, from the mill
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 30 minutes
Heat the butter and olive oil in a saucepan, not too hot. Peel the garlic, finely chop it, and add it to the butter and oil mixture along with the rosemary sprig. Peel the potatoes and make slashes about 2-3 mm apart, but do not cut all the way through; the slashes should resemble a fan. Toss the potatoes in the melted garlic butter and place them in a large baking dish. Spread the remaining butter mixture with the garlic and rosemary evenly over the potatoes. Bake in the oven preheated to 200°C for 35 minutes. Cook for a further 20 minutes at 150°C. Baste the potatoes with the melted butter from the baking dish every 10 minutes. Sprinkle the potatoes with Parmesan cheese and leave in the oven for another 15 minutes at 90°C. Brush with the butter again just before serving. Goes well with any pan-fried dishes, whether meat or fish. It also tastes great with herb quark or herb mayonnaise.
