Our constant companion during barbecue fun

Preheat the oven to 200°C. Finely grate the Parmesan cheese. Wash the potatoes with their skins on and halve them lengthwise. Boil the potato halves in salted water for about 15 minutes. Remove from the cooking water and let drain, then place them in a shallow baking dish, cut-side up. Season the potato halves with salt and pepper and sprinkle generously with the Parmesan cheese. Now drizzle enough olive oil into the dish to lightly coat the bottom – making sure not to let the oil run onto the potatoes. Place the baking dish in the hot oven for about 20 minutes. The Parmesan potatoes are ready when the cheese is nicely browned. Serve hot.
