Ingredients for 1 servings:

  • 500 ml passion fruit juice
  • 250 g gelling sugar 2:1
  • 1 lemon(s) (organic), grated peel and juice
  • 1 vanilla pod(s)

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

In a saucepan, combine the passion fruit nectar and the gelling sugar. Wash and dry the lemon in hot water, then grate 1 teaspoon of the zest and squeeze out the juice. Scrape the seeds from the vanilla pod and add them to the saucepan along with the pod, lemon juice, and lemon zest. Mix thoroughly, cover, and let stand for one hour. Then bring to a boil while stirring and simmer for 4 minutes. When the gelling test is successful, remove the vanilla pod and pour the boiling liquid into jars. This quantity makes enough for two 250 ml jars.
