Ingredients for 8 servings:
- 500 g pasta (e.g. penne)
- 100 g tomatoes, dried, pickled
- 100 g olives, black, pitted
- 2 cloves garlic
- 200 g sheep’s cheese or feta, with or without herbs
- 8 tbsp balsamic vinegar
- 8 tbsp tomato paste
- 16 tbsp olive oil
- 4 tbsp water
- salt and pepper
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Cook pasta al dente. Chop tomatoes and olives, and dice feta cheese. Combine tomato paste, vinegar, oil, water, and crushed garlic. Season with salt and pepper. Combine ingredients, pour marinade over the mixture, and let stand, covered, for 2-3 hours, stirring occasionally. Taste again before serving and adjust seasoning if necessary.
