Ingredients for 4 servings:

  • 1 bottle of red wine (Burgundy)
  • 30 g cinnamon stick
  • 60 g ginger, root, fresh
  • 2 tbsp rose water (calculate 1 drop of rose oil to 1/4 liter of water)
  • 400 g sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Medieval dessert wine

Mix the wine with the rose water and sugar. Finely chop the ginger root, break the cinnamon stick into small pieces, and lightly crush it in a mortar (you can also use pre-ground spices, but add 5-10 g each). Place the spices in an old, clean cloth, tie a knot, and let it steep in the wine and rose water for at least 3 hours. Strain through a filter several times until the liquid remains clear. This aromatic dessert wine was reserved exclusively for the nobility and consumed only in winter (and is a good alternative for those who quickly feel the effects of a hot punch).
