Ingredients for 4 servings:
- 200 g pasta (wholemeal croissants)
- 250 g mushrooms
- salt and pepper
- ½ lemon(s), the juice
- 4 eggs
- 150 g cheese (Gouda)
- 1 tbsp mustard
- 1 tbsp tomato paste
- 200 g sour cream
- 2 tbsp vinegar
- 1 gherkin(s)
- ½ bell pepper(s)
- 200 g ham, cooked

Pasta salad that you even get up at night for
Cook the pasta and eggs. Clean the mushrooms and drizzle with lemon juice. Peel and halve the eggs. Remove the yolks and finely chop the whites. Dice the cooked ham. Cut the cheese into strips. Dice the gherkin. Clean and dice the bell pepper. Mix the cooked pasta with the mushrooms, diced ham, and cheese strips. Fold in the gherkin and diced bell pepper. Add the chopped egg whites. Mash the egg yolks in a bowl and mix with the mustard, tomato paste, sour cream, and vinegar. Season with salt and pepper. Pour this sauce over the salad and let it stand for at least 30 minutes before serving.
