Pasta salad – quick and easy

Ingredients for 6 servings:

  • 500 g pasta (macaroni or fusilli)
  • 3 tbsp cucumber juice
  • 2 gherkins (not too small)
  • 125 g mayonnaise
  • 125 g quark (low-fat)
  • 1 tsp mustard (medium hot)
  • 500 g peas (frozen)
  • 200 g ham (cooked)
  • 4 tsp ketchup
  • Salt
  • Parsley

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Variant with ham, peas and cucumbers on a mayonnaise base

Cook the pasta in salted water (according to the package instructions). Drain the pasta and place it in a large bowl. Pour the cucumber juice over it. Cook the peas according to the package instructions and then add them to the pasta. Dice the ham and cucumber and add them to the pasta. Let the mixture stand for a while to cool. Meanwhile, in a small bowl, combine the mayonnaise, quark, ketchup, and mustard. Chop the parsley and add it to the mixture. Once the pasta and peas are just lukewarm, add the mayonnaise/quark mixture and mix everything together. Let the mixture stand in a cool place for about 1 hour. (This recipe is generous and can be used for 8 people.)
