Pasta Salad with Sorrel

The perfect pasta salad with sorrel recipe with a picture and simple step-by-step instructions.

Dressing:

  • 1 Red onion, cut into rings
  • 0,25 Leek, cut into rings
  • 5 small Tomatoes, diced
  • 2 handful Sorrel, cut into strips
  • 0,5 Zucchini, grated
  • 0,5 Yellow peppers, diced
  • 1 cups Yogurt 10% fat
  • Elderflower vinegar
  • Salt
  • Colorful pepper from the mill
  • 1 toe Garlic, pressed
  1. Cook the pasta in the usual way, drain and allow to cool. Later, put all the salad ingredients in a medium-sized salad bowl and mix them together.
  2. Mix the yoghurt dressing in a small bowl and season to taste.
  3. Spread the yoghurt dressing over the salad and mix everything well. Let it steep for 30 minutes and then season again to taste. The sorrel gives the salad a slightly sour note. Like any other vinegar, dose the elderflower vinegar carefully so that it does not get too “sour”. Tastes great! Have fun with my wild herb kitchen!
