Pasta: Tagliatelle with Crab Tails in Sherry Sauce
The perfect pasta: tagliatelle with crab tails in sherry sauce recipe with a picture and simple step-by-step instructions.
- 130 g Tagliatelle *
- 0,5 piece Carrot
- 1 piece Celery fresh and small
- 1 piece Onion
- 3 tablespoon Extra virgin olive oil
- 1 piece Bay leaf fresh
- 1 branch Fresh thyme
- 5 piece Cherry tomatoes
- 1 branch Parsley
- 0,5 teaspoon Rock salt
- 4 piece Black peppercorns
- 5 cl Sherry medium dry
- 100 g Mascarpone
- 1 piece Flour butter **
- 200 g Crayfish tails, frozen
- 1 piece Leek
- Chives
- 3 piece Cherry tomatoes
- Let the crayfish tails thaw.
- Peel the onion, carrot and celery and cut into small cubes. Heat the olive oil in a saucepan and fry the diced vegetables together with the fresh (dried) bay leaf and the sprig of thyme until soft.
- Deglaze with the sherry and let it boil down. Reduce the heat and add the halved tomatoes, the salt, the crushed peppercorns and the parsley. Pour in about 250 ml of water and the liquid from the crab tails and let it simmer for about half an hour.
- In the meantime, add water for the pasta. The Tagliatelle * Pasta: Noodles – my basic recipe to cook al dente. Dust the crab tails – up to 10 pieces – with a little flour, pepper and fry in hot olive oil.
- Remove the saucepan from the stove and pour the mixture through a sieve. Add about 10 finely chopped crab tails to the sauce and puree them. Now slowly bring the sauce back to the boil, stir in the mascarpone and let it boil down a little. Possibly bind with a piece of flour butter **
- Finally, add the leek, cut into fine rings, and the fried crab tails to the sauce. Season to taste with salt and pepper.
- Drain the pasta and place on a preheated plate. Pour the sauce over the pasta, garnish with the halved cherry tomatoes and the chopped chives.
- This sauce can also be made with prawns. Please use shelled shrimp for this. The bowls are then boiled in the sauce at point three. You can use cream instead of mascarpone and cognac instead of sherry.
