Ingredients for 4 servings:
- 500 g pasta, preferably thin spaghetti
- 100 g Parmesan, freshly grated
- 1 garlic clove(s)
- 1 bunch of parsley
- 1 lemon(s), unsprayed
- salt and pepper
- chili
- Sugar
- 300 g Parma ham
- olive oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel and finely chop the garlic, grate the Parmesan cheese, wash and zest the lemon, then squeeze the lemon juice, wash and chop the parsley. Cook the pasta in boiling salted water. Tear the ham into pieces and fry in a pan (without fat) until crispy. Remove the ham and let it drain on a kitchen towel. Heat 5 tablespoons of olive oil in the pan, sauté the lemon zest and garlic, add the lemon juice and bring to a boil. Season with pepper, chili, and a pinch of sugar. Add 5 tablespoons of the pasta water. Drain the pasta and add it to the pan with the lemon oil, stirring in the parsley. Serve with the Parma ham and Parmesan cheese.
