Pastries: Muesli and Apple Scones

Ingredients
 

  • 1 Pc. Apple
  • 85 g Muesli with dried fruits or Bircher muesli
  • 85 ml Cold buttermilk
  • 1 Pc. Egg
  • 250 g Flour
  • 60 g Muscovado or whole cane sugar
  • 2 tsp Baking powder
  • 0,5 tsp Baking soda
  • 1 pinch Salt
  • 125 g Cold butter

Instructions
 

  • Wash the apple, do not peel it and dice it finely. Mix with the granola and set aside.
  • The egg, buttermilk and butter should be processed cold, straight from the refrigerator, quickly, so that the dough is nice and fluffy. Whisk the buttermilk and egg together. Mix the flour, sugar, baking powder, baking soda and salt in a bowl. Add the cold butter to the flour mixture and quickly work it into crumbs with your hands. Now briefly stir in the buttermilk and egg mixture. Finally add the apple and muesli mixture and stir in briefly.
  • Place the dough on a floured work surface and knead loosely into a pile. Then shape into a rectangular plate approx. 2 cm thick. Cut into approx. 5 - 7 cm wide strips or cubes. Alternatively, you can cut out round scones with a glass.
  • Place the scones on a baking sheet lined with baking paper and bake in the preheated oven at 200 degrees (or convection oven 175 degrees) on the middle rack for about 15 - 18 minutes until golden yellow.
