Pastries: Apple and Banana Muffins
The perfect pastries: apple and banana muffins recipe with a picture and simple step-by-step instructions.
- 2 Pc. Apples
- 70 g Frying oil or melted coconut oil
- 3 Pc. Very ripe bananas
- 130 g Wholemeal spelled flour
- 100 g Spelled flour type 630
- 80 g Coconut blossom sugar
- 1 tsp Cinnamon
- 3 tsp Tartar baking powder
- 1 pinch Salt
- The specified amount is exactly enough for 12 muffins. Puree the bananas with the oil in the food processor. Mix the two types of flour, baking powder, coconut blossom sugar, cinnamon and salt briefly and stir in. Do not stir for too long, otherwise the dough will not be fluffy afterwards.
- Finely dice one of the apples and fold it into the batter. Spread the batter on the prepared muffin tray. Cut the second apple into fine wedges and press lightly onto the dough.
- Bake in a preheated oven at 200 degrees top / bottom heat for about 25 – 28 minutes until golden yellow. Then let it cool down for about 15 minutes.
- For a modified version, you can leave out the cinnamon and stir in ground ginger. In addition, stir a teaspoon of turmeric into the batter.
