Peach and passion fruit jam

Ingredients for 1 servings:

  • 500 g vineyard peaches or flat peaches
  • 450 ml passion fruit juice
  • 2 tsp, heaped citric acid
  • 2 limes, the juice
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 24 minutes

Peel peaches, preferably vineyard or flat peaches, and weigh out 500g of flesh. Puree in a large saucepan with the preserving sugar. Add the remaining ingredients, stir, and bring to a boil, then simmer for 4 minutes. Test for set and pour into prepared jars while still hot. The jam will boil quickly, so choose a large, deep pan.
