Peach Chopped Casserole

Ingredients for 3 servings:

  • 200 g rice, cooked
  • 300 g minced meat
  • 2 m.-sized onion(s)
  • 1 large can of peach(s), collecting 100 ml of juice!!!
  • 150 ml curry ketchup
  • 1 cup of cream
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the minced meat with onions, season with a little salt and pepper, and mix with the rice. Drain the peaches (reserving 100 ml of juice) and slice them into wedges. Layer them alternately with the rice and minced meat mixture in a casserole dish, using the peaches as the last layer. Bring the curry ketchup, cream, and peach juice to a boil, mix well, and pour over the casserole. Bake the casserole for about 20 minutes at 200°C (400°F). This casserole can be prepared the day before.
