Peach sorbet or nectarine sorbet

Ingredients for 4 servings:

  • 500 g peaches or nectarines
  • 100 g sugar
  • 2 packets of vanilla sugar
  • 1 lemon(s), juice
  • 100 ml water
  • 2 tbsp liqueur (Licor 43 or other liqueur)

Working time approx. 20 minutes; Total time approx. 20 minutes

Preparation with and without ice cream maker

Briefly place the peaches or nectarines in boiling water to make the skin easier to remove. Peel the fruit and then remove the pit. Cut the flesh into pieces. Bring the sugar, vanilla sugar, lemon juice, and water to a boil, then simmer for a few minutes until reduced to a syrup. Blend the fruit, syrup, and, if desired, liqueur together. If you have a compressor-powered ice cream maker, you can pour the mixture straight into the ice cream maker. For ice cream makers without a compressor, pre-chill the mixture in the refrigerator/freezer first; otherwise, the ice cream maker won’t be able to do it. Without an ice cream maker, place the mixture in the freezer for at least 4 hours, stirring regularly.
