Peanut Butter Mandarin Cake

Ingredients for 1 servings:

  • 5 eggs
  • 400 g flour
  • 90 g butter
  • 1 sachet of baking powder
  • 200 g crunchy peanut butter
  • 1 sachet of vanilla pudding powder
  • 250 g sugar
  • 3 bags of vanilla sugar
  • 2 cans of mandarin oranges, drained
  • e.g. milk
  • n. B. Cinnamon powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Preheat the oven to 180°C (top/bottom heat). Mix the flour, baking powder, sugar, vanilla sugar, and cinnamon in a bowl with a spoon. Melt the butter and peanut butter together in the microwave. Keep an eye on it so it doesn’t burn! Stir occasionally if necessary. Now add all the other ingredients to the bowl and mix with a hand mixer until you have a batter. If you want large pieces of mandarin oranges, add them at the very end and just stir with a spoon; otherwise, they will be nice and small and distributed throughout the cake. The batter should be more runny, similar to cheesecake mixture. Add more milk (to make it runnier) or flour (to make it thicker) if necessary. Line a baking dish with baking paper, pour in the batter, and bake for about 45 minutes. Do the skewer test every now and then!
