Pear and apple crumble

Ingredients for 1 servings:

  • 4 bulb(s)
  • 2 apples
  • ¼ tsp cinnamon powder
  • 110 g brown sugar
  • maple syrup
  • 100 g buckwheat flour
  • 60 g butter, soft
  • 6 spiced speculatius cookies
  • 2 cups of plain Greek yogurt
  • Vanilla, ground

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Squeeze the lemon. Peel and dice the pears and apples, and place them in a baking dish. Add 2 tablespoons of lemon juice, 30g of sugar, and 1/4 teaspoon of cinnamon. Mix everything together. Mix the remaining sugar (80g) with the buckwheat flour, 1 tablespoon of lemon juice, 1 tablespoon of maple syrup, and four crumbled speculaas (spiced biscuits). Add the warm butter and mix briefly with a hand mixer fitted with a dough hook. Then continue to work with your hands until small to medium-sized crumbs form. Pour the crumbs into the baking dish over the fruit. Bake the crumble in the preheated oven at 200°C (bottom heat) for about 20 minutes, then for another 10 minutes at 150°C (convection oven). Meanwhile, mix the Greek yogurt with 1 teaspoon of maple syrup and the ground vanilla (amount to your liking) and refrigerate until the crumble is ready. Divide the crumble among plates and top each serving with a generous dollop of Greek yogurt. Crumble the remaining two speculatius biscuits onto the yogurt for a crunch.
