Pear – Bean – Salad

Ingredients for 4 servings:

  • 250 g beans, green
  • 1 tbsp butter
  • 2 bulb(s)
  • 2 tbsp sugar
  • 1 tbsp balsamic vinegar
  • 200 g crème fraîche
  • ½ lemon(s), the juice
  • ½ tsp lemon zest, freshly grated
  • 1 bunch of chives
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and trim the green beans. Blanch in 1.5 liters of boiling salted water for about 10 minutes. Then rinse with cold water. Cut the pears in half, remove the cores, and dice them. Heat the butter in a pan and fry the diced pears until crisp. Sprinkle with sugar and let them caramelize slightly. Deglaze with balsamic vinegar and set aside. Finely chop the chives and mix with the crème fraîche and lemon zest. Finally, add the beans and diced pears and season with salt, pepper, and lemon juice. Refrigerate and let stand for about 2 hours before serving.
