Pear – Caramel – Jam

Ingredients for 4 servings:

  • 75 g walnuts
  • 1.1 kg pear(s)
  • 120 ml lemon juice, freshly squeezed
  • 500 g sugar
  • 1 pack of Gelfix Extra (2:1)

Instructions

Chop the nuts, peel and core the pears, and finely chop them. Mix the pears with 2 tablespoons of lemon juice. Melt 200g of sugar over medium heat. Deglaze with the remaining lemon juice and bring to a boil until the caramel has dissolved. Mix the remaining sugar with the gelling agent and pears, then add to the caramel and bring back to a boil while stirring. Boil briskly for 3 minutes, stirring continuously. Add the nuts. Fill clean jars to the brim with jam, seal, and leave upside down with the lids on for 5 minutes. Makes about 4 jars of 275ml each. Approximately 830 kcal per jar.
