Pesto Pancakes with Ham

The perfect pesto pancakes with ham recipe with a picture and simple step-by-step instructions.

  • 65 g Green or red pesto
  • 1 Pc. Egg
  • 80 g Flour, preferably type 630 spelled
  • 160 ml Milk
  • 5 Discs Cooked ham
  • 5 Discs Any semi-hard cheese
  • Olive oil
  1. Mix the pesto, egg, flour and milk into a liquid batter. Brush a well-coated pan lightly with olive oil and heat. When the pan is hot, pour a small ladle of batter (equivalent to approx. 5 – 6 tbsp) into the pan and swirl the batter thinly into the pan.
  2. When the edges of the dough bend slightly upwards and the dough is firm on the underside, turn and bake from the other side for about 1/2 minute.
  3. Cover each finished pancake with a slice of ham and a slice of cheese and fold up to form a crescent.
  4. This fits e.g. a delicious salad. The amount makes about 5 – 6 pancakes.
