Pickled cheese with wild herbs

Ingredients for 2 servings:

  • 300 g cheese (Brie cheese) or sheep’s cheese
  • 100 ml olive oil
  • 50 ml lemon juice
  • 25 ml water
  • 2 cloves garlic
  • 1 pinch(s) of sugar
  • salt and pepper
  • Marjoram (Organic), wild
  • oregano
  • mint
  • 6 leaves comfrey, large

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Cut the cheese into pieces. Mix olive oil, water, and lemon juice to make a marinade. Season with salt, pepper, and a pinch of sugar. Slice the garlic cloves and finely chop the herbs. Pour everything over the cheese, mix, and let stand overnight. Line a shallow bowl with the comfrey leaves and spread the cheese and sauce over it. Decorate with flowers. Serve with fresh wild herb rolls.
