Pickled plums

Ingredients for 1 servings:

  • 300 g plum(s) or damsons
  • 150 ml apple cider vinegar
  • 150 ml water
  • 150 ml honey
  • 1 stalk(s) cinnamon
  • some ginger root
  • 1 clove(s)
  • 1 star anise
  • some vanilla
  • 1 tsp lemon peel

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the plums, halve them, and pit them. Mix the vinegar with the water and honey and add all the spices. Bring the liquid to a boil, then add the plums and simmer gently for 10-15 minutes. Then remove the plums and reduce the liquid by one-third. Boil the plums briefly in the liquid again, then transfer them to clean jars and pour the liquid over them. Immediately seal the jars tightly.
