Ingredients for 1 servings:

  • 2,200 g rowan berries, washed and shredded
  • 500 g sugar, preferably brown

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Vitamin-rich winter supply, as a cake filling, slightly bitter taste.

Soak rowanberries in 500 ml of water and sugar for 4 hours or overnight, then heat gently to a simmer (90°C). Fill into Twist-Off Jars©, seal immediately, and turn upside down. The high vitamin C content guarantees a long shelf life. The full flavor is achieved after three months of storage in a cool, dark place. Makes 10 jars of 250 ml each. Tip: This makes a filling for my rowanberry tart. Also delicious over ice cream, with muesli, or yogurt. Freezing the rowanberries for 48 hours beforehand will slightly reduce their bitterness.
