Pineapple in espresso jus

Ingredients for 4 servings:

  • 1 pineapple, fresh
  • 4 figs, dried
  • 1 tbsp walnuts, roughly chopped, roasted without fat
  • 2 tbsp brown sugar
  • 1 ½ dl espresso, freshly brewed
  • ½ dl brown rum

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel the pineapple, halve it, and remove the core. Then cut it into approximately 1 cm thick slices. Slice the figs as well. Caramelize the sugar in a wide pan, remove the pan from the heat, deglaze with rum, and add the espresso. Simmer until the sugar has dissolved. Add the pineapple slices and figs and let it simmer over low heat for about 10 minutes. Serve on plates, pour the espresso juice over it, and sprinkle with the walnuts. Serve with a scoop of vanilla ice cream.
