Ingredients for 1 servings:

  • 6 tbsp pistachios, chopped
  • ½ tsp thyme, fresh, chopped or dried
  • 1 pinch(s) of salt, preferably vanilla salt
  • 8 tbsp powdered sugar, heaped tbsp

Spicy-sweet brittle for desserts

Mix the pistachios with the thyme and a good pinch of salt. Caramelize the icing sugar in a pan while stirring. Be careful, it burns easily. Remove from the heat, add the pistachios and mix well. Quickly pour the hot mixture onto baking paper, cover with baking paper and immediately flatten. This works well with a rolling pin. Depending on your intended use and personal preference, coarsely chop the cooled brittle or grate it from the edges with a large knife. Tastes good on creams and puddings, for example. You can prepare it the day before and store it in a dry place in chunks. If you can’t find chopped pistachios, you can also chop the roasted in-shell ones yourself. If they are already salted, don’t add any more salt.
