Ingredients for 1 servings:

  • 1 kg wheat flour
  • 1 cube of yeast
  • 200 g feta cheese
  • 1 tsp sugar
  • 1 tsp, heaped salt
  • 1 cup milk
  • 1 cup water, possibly more
  • 2 eggs
  • some oil
  • some butter

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Pita with feta cheese – mom’s style

Sift the flour, mix in the sugar and salt. Dissolve the yeast in about 10 tablespoons of milk and stir into a paste with a little more flour, then cover with a little more flour. Let it rest for about 15 minutes, until the flour crust cracks. Add the paste, the remaining milk, the water, one egg, and one egg white to a well in the flour. Knead into a soft dough and cut into 3 pieces. Roll out each piece and brush with softened butter. Knead again and roll out into a round shape (about 1 cm thick). Cut into 10 triangles (like a pie). Crumble a piece of feta cheese over the wide part of each triangle. Roll up towards the center. Brush a baking dish with oil and place the pieces in it. Cover and let rise for about 1 hour. Brush with egg yolk. Preheat the oven to 180°C (top/bottom heat). Bake on the lowest rack for about 60 minutes until golden brown. When the pita breads are ready, spray them with water and cover them with a cloth.
