Ingredients for 1 servings:

  • 500 g spelt flour
  • 4 g dry yeast
  • 1 tsp sugar
  • ½ tsp salt
  • 10 ml olive oil
  • 250 ml water
  • 250 g mozzarella, grated
  • 200 g bacon
  • 1 tomato(s)
  • 500 g minced meat
  • Oil for frying
  • Flour for the mold

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

Mix all the ingredients for the dough in a mixing bowl, cover, and let rise for 1 hour. Divide the minced meat into three equal pieces. Shape each into a ball and flatten slightly. Brown on both sides in a pan with oil and set aside. Take about 1/3 of the dough (break off another 10g of this and set aside), knead it into a ball, and roll it out on a baking sheet to a thickness of about 1cm. Then take a small bowl, sprinkle it with some flour, and line the dough with it (there should be some dough overhanging the edge). Layer in some mozzarella, then two slices of bacon and a suitable tomato slice. Place the burger patty on top of the tomato slice and cover with the reserved piece of dough as a lid. Fold up the excess dough and seal it tightly. Turn the bowl out onto a baking sheet lined with baking paper, with the sealed side facing down. Cut a cross into the top of the dough with a knife and sprinkle with mozzarella, place three small slices of salami on top and bake in the oven at 200 degrees Celsius for 15 to 20 minutes.
