Pizza fritters with leaf salad

Ingredients for 4 servings:

  • 1 pack of potato pancakes, frozen (8 pieces, 600 g)
  • 2 tomatoes
  • 200g mozzarella
  • 100g salami
  • 1 pack of mixed leaf salad, approx. 200 g
  • some oil
  • 60 g black olives without stones
  • 3 tbsp dressing, (vinegar-oil dressing)
  • some salt and pepper from the mill
  • e.g. basil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fry the fritters in a pan in heated oil according to the package instructions until crispy. Wash and sort the lettuce. Wash, trim, and slice the tomatoes, then halve or quarter the slices. Drain the mozzarella and cut into pieces. Slice the salami first, then halve them. Halve the olives, if desired, and mix with the lettuce and dressing. Season with salt and pepper. Preheat the grill. Top the fritters with tomatoes, salami, and mozzarella, season with pepper, and grill in the oven for about 4 minutes. Serve garnished with basil leaves. Serve with the salad.
