Ingredients for 12 servings:

  • 3 can/n tomatoes, peeled
  • 3 bell peppers, yellow
  • 2 stalk(s) leeks
  • 750 ml vegetable stock
  • 1 jar mushrooms, sliced
  • 250 g processed cheese, herb or cream cheese
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 1 tsp pizza seasoning
  • ½ bunch fresh basil

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Place the tomatoes and their liquid in a large pot, puree, and strain through a sieve. Halve the peppers, remove the stems, deseed, and white membranes. Wash the pods and cut into strips. Trim, halve, wash, and thinly slice the leek. Add the pepper strips and leek rings to the tomatoes and simmer for 10-15 minutes. Add the stock and mushrooms and bring to a boil. Mix the processed or herb cheese with a little of the soup until smooth, then stir into the remaining soup, heat through, and season with salt, pepper, and the pizza seasoning. Do not allow the soup to boil again! Garnish with basil leaves.
