  • 100 g ginger, fresh, peeled

The quantities given here make 9 jars of 230 ml each. Cut the plums into small pieces. Peel and finely chop the apples, onions, and ginger. Finely chop the chili pepper. You can use more or less chili, depending on your taste. Using one pepper makes the chutney fruity and sweet, with a slight spiciness, making it suitable even for those who don’t like spicy food. Heat enough oil in a large pot. Sauté the onions and ginger over medium heat until translucent. Add the chili, plums, and apples and sauté briefly. Gradually add the sugar, stirring constantly until dissolved, then add salt. Reduce the heat to the lowest setting, add the balsamic vinegar, and simmer for about 30 minutes, stirring occasionally. The time can vary depending on the desired consistency. Finally, season to taste with salt, chili, and vinegar. Pour the hot chutney into clean screw-top jars, seal the jars tightly, and let the chutney cool upside down. This plum and apple chutney is a savory-sweet sauce that pairs wonderfully with many dishes. It tastes wonderful with meat, cheese, baked Camembert, bread, and much more. Because the chutney is cooked, it has a long shelf life.
