Ingredients for 1 servings:
- 375 ml water, lukewarm
- 1 ½ tsp salt
- 300 g wheat flour type 550
- 300 g spelt flour
- 1 ½ packets of dry yeast
- 80 g walnuts
- 120 g prunes
- 1 pinch(s) bread spice mix

First, pour the water and salt into the bread maker’s bowl. Then add the flour with the bread spice and sprinkle over the yeast. I use the whole wheat program on my bread maker for this. When the machine signals for more ingredients, add the walnuts and prunes. The ratio of nuts to plums can, of course, be varied, but I prefer more plums than nuts. The dough should not be too firm, but rather slightly runny. If it’s too firm, you can add a little water. If it’s too runny, gradually add a little flour during the kneading phase. When using dry yeast, it’s best to check the flour quantity: One packet of my dry yeast is enough for 500 g of flour, so I add about 1 1/4 to 1 1/2 packets of yeast to the flour. The recipe is based on a 1000 g loaf.
