Plum cake with cinnamon crumble – a twist

Ingredients for 1 servings:

  • 125 g butter, room temperature
  • 125 ml milk
  • 3 m.-sized eggs
  • 280 g flour
  • 200 g sugar
  • 1 tsp cinnamon
  • 3 tsp baking powder
  • 1 point plum(s), pitted
  • 3 tbsp butter
  • 3 tbsp sugar
  • 6 tbsp flour
  • 1 pinch of cinnamon

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Make a batter from room-temperature butter, milk, eggs, flour, sugar, and cinnamon. Finally, stir in the 3 teaspoons of baking powder and pour into a 28cm springform pan. Smooth the batter. Arrange the pitted plums in a circle on the batter (baking will cause them to sink into the batter). Heat the 3 tablespoons of butter, 3 tablespoons of sugar, and a pinch of cinnamon in a saucepan. Add the flour to the heated mixture and stir with the dough hook until a crumble forms (add a little more flour if needed). Spoon the crumble over the batter and plum mixture. Bake in a preheated oven at 170°C (fan oven) for 50-60 minutes. The cake tastes delicious with whipped cream, to which a cup of sour cream has been stirred.
