Ingredients for 1 servings:

  • 3,500 g plum(s)
  • 6 cloves
  • 3 stalk(s) cinnamon
  • 625 g sugar
  • 1 tbsp gingerbread spice, ground
  • 200 g dark chocolate shavings

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Wash, halve, and stone the plums. Place them in a roasting pan and sprinkle with the spices. Add 10 plum stones. Sprinkle 100g of sugar over them and stir in. Braise in a preheated oven at 150°C (300°F). After 30, 60, 90, 120, 150, 180, and 210 minutes, stir in 75g of sugar each time and continue braising. Then stop adding the sugar and braise for at least another 2.5 hours, stirring occasionally. The jam is ready when the plums have broken down, the liquid has reduced, and the jam is nice and dark. Remove the roasting pan from the oven. Remove the plum stones, cinnamon sticks, and cloves. Season the jam with sugar and gingerbread spice, if desired. Fold in the chocolate drops. Immediately ladle into hot, rinsed jars and seal tightly. During the Christmas season, I filled my Linzer tortes with this jam. An alternative to gingerbread spice is plum jam spice.
